The story
Small whole potatoes caramelized in melted sugar and butter until they wear a glossy, almost lacquered brown coat, brunede kartofler are one of those side dishes that seem to exist only for Christmas. All year long Danes eat their potatoes boiled or roasted, but this caramelized version is reserved exclusively for the holiday table. The method demands attention: the sugar is first caramelized dry in the pan, then butter is added to form a smooth brown glaze, and the boiled potatoes are rolled in it until they are covered in a layer that, in the light, looks very much like varnish. The risk of scorching the sugar is real enough that many Danish families assign the job to someone who has already proven themselves in previous years. The sweetness of the caramelized potatoes plays against the crisp, salty crackling of the roast pork on the same plate. For the diaspora, brunede kartofler are one of the simplest Danish recipes to try first: just three ingredients, and the result looks and smells entirely like the holidays.
