The story
The name "insalata di rinforzo," literally "reinforcement salad," comes from an old Neapolitan habit. The salad was not made in one pot for one meal. Instead, a first batch of boiled cauliflower, olives, capers, pickled peppers and anchovies was prepared on Christmas Eve as an appetizer, and then, throughout the holiday season until New Year's, it was "reinforced" with fresh ingredients whenever it ran low. The result is a salad that, over time, becomes more and more steeped in its vinegar dressing and grows richer, not poorer, even though people keep eating from it. The practical advantage was obvious in households that received guests constantly during the holidays: instead of cooking from scratch for every visitor, it was enough to add a little more cauliflower to the bowl already on hand. Today it is less often made in this drawn-out way, but the name remains as a reminder of a time when holiday hospitality was measured in weeks, not days.
