The story
Orehnjača, a yeast cake rolled around a filling of ground walnuts, belongs to a wider Central European family of rolled cakes that links Croatia with Hungary (walnut bejgli), Poland, and other neighbors — each country with its own name and small variations, but all built on the same basic technique of stretched yeast dough rolled around a sweet, dense nut filling. In Croatian homes orehnjača is made for Christmas and Easter alike, often paired with its sister makovnjača, so the holiday table usually holds both kinds at once, cut into slices that reveal the spiral pattern of the filling. Making it takes patience: the dough has to rise enough, and the filling must not be too wet, or the cake turns soggy. In many families it is made days ahead, since it keeps well wrapped in a cloth or foil. For Croatian families in the diaspora, this cake is often the first recipe younger generations learn from their grandmother, precisely because of its place at every major holiday, not only Christmas.
